"Feta Pesto"... because feta matches with everything & parsley goes everywhere!
This our version of a green pesto where all the ingredients get a Greek "touch"... We substitute parmesan for feta (of course), pine nuts for walnuts, basil for parsley & balsamic for white wine vinegar. Yes, we keep the garlic as garlic in the Greek version!
Simply add all the ingredients in a blender & mix well. You can always add vinegar & garlic to taste.
Enjoy it with Hilopites (Greek Traditional Pasta)...
or stuff your mushrooms & grill them!
