“Domaine Karanika” produces the finest quality sparkling & still wines in total harmony with nature without any concession to the health of people & the earth. Their organic/biodynamic vineyards at the Amyntaio plateau in the far North-west of Greece include old to very old ungrafted Xinomavro vines, the younger Assyrtiko & the almost forgotten Limniona. Their wines range from the sparkling Karanika Cuvee Speciale & Prestige, the aged red Xinomavro/Limniona blends to the razor-sharp white Assyrtiko. Karanika’s winemaking philosophy is that real quality is achieved only when there is complete balance in all aspects of the growing & winemaking process. This includes minimal handling of grapes & wines with few to none chemical additions. Follow nature, instead of trying to control it, that means: no pumping to transport must & wines, but gravity, piegage, adding only sulfites & Montmorillonite clay to the wine, & the use of “homeopathic” sprays in the vineyard instead of fertilisers & pesticides.
“Cuvée Rosé Extra Brut – Roze Afrodes” is a varietal wine of Xinomavro & Limniona that can be aged. It has a light pink colour & a nose being dominated by strawberry, sour cherry & nut in a candy background. Rich & creamy bubbles highlight the quality of the wine where the rich fruity mouthfeel & the balanced acidity & sugars harmoniously lead to a persistent & pleasant finish.
