Omeleta tis Kerkinis
- 160-180g Pulled Buffalo
- 2x Tea Spoons Bee Pollen
- 6x Eggs
- 1-2x Pinches Fine Sea Salt
- 2-3x Pinches “Aroma Tale” Herb Mix
- Extra Virgin Olive Oil
Step by step
“Omeleta tis Kerkinis” aka our Scrambled Eggs with
Pulled Buffalo from Kerkini Lake & Bee Pollen from Kerkini Mountain!
Add a bit of extra virgin olive oil in a warm pan & smash in the pulled buffalo when the oil is also warm. Keep stirring it to get it warm & “crunchy”. In the meantime break the eggs in a bowl & mix them well. When the pulled buffalo is ready add the eggs, the sea salt* & the herb mix & after a good mix lower the fire to half. Keep on mixing at a slow pace & add the bee pollen a bit before the eggs are ready. Serve with a bit of extra bee pollen & extra virgin olive oil on top!
